EVO Oil Paluffo

Golden yellow, it has aromas of artichoke and tomato, hints of almond and freshly cut grass, a pleasantly bitter taste with a delicate spicy sensation. From Frantoio, Moraiolo, Leccino, Pendolino olives picked by hand and cold-pressed within the following three hours, the oil is filtered and stored in an oxygen-free atmosphere to maintain its organoleptic characteristics over time. Ideal for all meals but also served alone on the bread, for the traditional “fettunta”.

2020 was an exceptional year for olives, with little presence of the oil fly and ideal climatic conditions in the flowering and ripening phase. The harvest at the end of October and the immediate cold pressing in the mill in 2 or 3 phases, allowed to obtain an oil very rich in polyphenols and aromatic components.
